Day 21
Today is Day 21. Slept fairly well last night. Getting more sleep, part of that is because of a challenge for a good friend of mine and health coach Sheila Favero. She challenged me to try for at least seven hours a night. She also challenged me to eat like my friend that had bariatric surgery will be doing and I accepted her challenge. She also encouraged me to have my carbs and protein equal 100 grams each daily and she said that will help me lose weight. So over the next day or two I will be redesigning my menus to meet these challenges. I will probably include carb and protein counts to help me track them. Also swimming starts Tuesday, can't wait.

Total Calories for today figure out to be about 1300. Could use a lot of calorie counts like this. I want the calories to be about 1800 or so. I know what to do, I just need to get on the stick and do it. I know I keep saying that and hopefully it going to sink in this hard head very soon. And time to confess my steps were only about 4,000 today. Sundays are going to be lower and that is the reason for shooting for 11,500 daily, so my weekly total will be at least 70,000. Boy, I better get committed and busy or maybe I should be committed. The water was no problem because I am always drinking water.

BANANA BREAD
Honey and applesauce are used instead of sugar and oil
BANANA BREAD
Ingredients:
2 cups whole-wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsweetened applesauce
3/4 cup honey
2 eggs, beaten
3 mashed overripe bananas

Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten.
Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, and then turn out onto a wire rack.

Day 20
We can rationalize our size anyway we want. We make jokes about it, blame on genes, large bone structure, portions, not wanting to hurt other peoples feeling s by not eating enough and a myriad of other excuses but we ourselves are the ones to blame because of the choices we make. Enough of the soap box for today.

Total Calories for today figure out to be about 1600. Calories are getting closer to 1800 for the day, but then again I did't have dinner or a couple of snacks. Could have and should have been smarter about breakfast and how much pizza I ate. I want the calories to around about 1800 or so. I know what to do, I just need to get on the stick and do it. I know I keep saying that and hopefully it going to sink in this hard head very soon. And time to confess my steps were only about 8,500 today. Need to get them back up to 10,000. The water was no problem because I am always drinking water.

Day 19
If only it would be possible, but then again I can't donate blood because I am on blood thinners for the clot in my leg, so I guess I am right back where I am now. Woke up today not feeling quite right. Not really something that could be traced by to dinner or the treat last night, just not quite right. Probably wont be many steps today. We will see.

Day 18
There is something to be said for that. Got a call from my father today and he invited Vickie and I to go to Taggart's Grill in Traggart. If you have not been there, you are missing something. The food is very good and the desserts are out of this world. Earlier this year when Vickie had her MRI and even before we got the results from the Dr., we knew it was cancer we went to Taggart and bought a bunch of the desserts because Vickie wanted a treat. Anyway we will see what happens and how strong I am.

Next time I will stay away from the fish and chips and cookies, even though the are the best macaroon cookies I have ever had. I want the calories down to about 1800 or so. Day 17
Today started out pretty normal. I woke not feeling hungry, which was nice. I am finding out that the longer I refrain from having sugar, the easier it is so stay away from it. I guess what they say is true, it is addictive. Who knew?

Raspberry, Avocado & Mango Salad

Raspberry, Avocado & Mango Salad
Ingredients
1 1/2 cups fresh raspberries, divided1/4 cup extra-virgin olive oil
1/4 cup red-wine vinegar
1 small clove garlic, coarsely chopped
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground pepper
8 cups mixed salad greens
1 ripe mango, diced (see Tip)
1 small ripe avocado , diced
1/2 cup thinly sliced red onion
1/4 cup toasted chopped hazelnuts, or sliced almonds (see Tip), optional
Directions
Puree 1/2 cup raspberries, oil, vinegar, garlic, salt and pepper in a blender until combined.Combine greens, mango, avocado and onion in a large bowl. Pour the dressing on top and gently toss to coat. Divide the salad among 5 salad plates. Top each with the remaining raspberries and sprinkle with nuts, if using.
Tips: Tips: To dice a mango:
Tips: 1. Slice both ends off the mango, revealing the long, slender seed inside. Set the fruit upright on a work surface and remove the skin with a sharp knife.
Tips: 2. With the seed perpendicular to you, slice the fruit from both sides of the seed, yielding two large pieces.
Tips: 3. Turn the seed parallel to you and slice the two smaller pieces of fruit from each side.
Tips: 4. Cut the fruit into the desired shape.
Tips: To toast chopped or sliced nuts, heat a small dry skillet over medium-low heat. Add nuts and cook, stirring, until lightly browned and fragrant, 2 to 3 minutes.

Day 16
Today is Sept.1st, my first day of official retirement. Actually, it doesn't feel any different than all those days I didn't work. I am going to have to work at getting my steps in now. Also had a talk with my Dr. today. I had an ultrasound on my legs last week and he gave me the results. It is not good because there are vein problems besides the DVT and that is why my legs swell. I am not sure what the next step will be because at one point they were talking about surgery on the leg to laser a vein closed. We will see.
