Just a thought.................

I stated that I will be adding regular recipes to this blog, but after further thought I will add them to my blog..Rick's Favorite Recipes.  It seems like a better place for them, than on a blog about healthy eating and weight loss.  Just saying.............

Sriracha Glazed Almonds


Sriracha Glazed Almonds
Ingredients
  1. 1/3 Cup Dark Brown Sugar
  2. 2 Tablespoons Sriracha – CHA! by Texas Pete
  3. 1½ Cups Raw Almonds
  4. Sea Salt or Himilayan Salt
Instructions
  1. Preheat oven to 350°
  2. In a small saucepan over medium heat, combine brown sugar and sriracha. Whisk continuously until sugar is dissolved and mixture begins to bubble. (2-3 minutes)
  3. Carefully pour glaze over almonds and stir until evenly coated.
  4. Transfer to a grease, foil-lined baking sheet. Sprinkle generously with salt.
  5. Bake for 8-9 minutes. Stir twice during this time.
  6. Remove from oven and allow to cool 15-20 minutes.
  7. Peel the foil from the almond brittle (be careful not to leave any foil pieces attached). Break apart and serve.
  8. Store in an airtight container.

Day 10



I am officially have way done with my time at the school.  In some ways it has been harder than I thought it would be but in other ways it has been easier.  This makes three days in a row my steps have been over 10,000 and I seem to sleep better.  I can also tell I am out of shape as far as work goes but I seem to be getting back in shape quickly.  I will probably get in shape just in time to leave and that will make my swimming all the more important.

Total Calories for today figure out to be about 2480.  That is to high, even though I have been told I can have up to 2750 and still lose weight as long as I am active.  Need to get them down to an average of 1800 a day.  Total steps for today is about 10,100.  Down just over a 1000 from yesterday but still over the 10,000 mark.  This makes me happy.  The water was no problem because I am always drinking water.

Different take on water consumption


Day 9





I need to make eating good a habit and quit messing around.  I need to keep my sleep at about about 6 1/2 to seven hours a night and get moving and make swimming a major part of my exercise.  When I swam regularly a number of years ago I was able to lose weight and keep it off.  Hopefully, when my stretch at the school things will be to get on a regular schedule and routine.

Day 8


The second week now begins.  I think this is going to be a very hard time for me because I am going back into the school kitchen for a few days to help my boss, as she will be getting a couple of new people in her kitchen and I want to help her  before I retire.  As I said in my last Food Journal post I will be weighing my self on Mondays and my weight today should I still have that half pound I thought I lost but it seems to have found me and I can't seem to shake it.

Total Calories for today figure out to be about  2180.  To high for me.  I know I shouldn't have had the donuts but I fell to temptation.  They were fresh chocolate cake donuts.  My boss said she is going to see if I would post about the fact I had donuts at work.  She also said she will be watching to see if I am making progress and if not she will be after me.  I is good to have so many people worried about my health.  Total steps for today were about 10,500.  That is one thing I see an improvement in.  I am now going to have keep on doing 10,000+ since I have shown it can be done.

(Sugar free) Dreamsicle Salad

DREAMSICLE SALAD
1 sm. box (4 serv. size/.3 oz pkg)* sugar-free orange jello
1 sm. box (4 serv. size/1 oz pkg)* sugar free instant vanilla pudding
1 - 10 ozs. can mandarin oranges, drained
1 - 8 ozs. tub fat free frozen whipped topping, thawed

Dissolve jello in 1 c. boiling water. Add 1/2 c. cold water; let set in fridge for 20 minutes.  With mixer or whisk, add dry vanilla pudding mix to jello and beat until
smooth. Fold in oranges and whipped topping (by hand). Refrigerate.

Try strawberry jello with strawberries, peach jello with (no sugar added) peaches, etc

Day 7


The first week has come to an end.  As I look back over the week it has had it's highs and lows.  As I am reviewing my fitbit dashboard, it says I can have 3,146 calories today and still lose weight.  I am not sure why it says that because there was only one day this week that I went over 3,100 calories and I gained a half pound.  That does not make me happy.  The dashboard says I have walked over 53,000 step or 26.5 miles.  Supposedly I have burned over 30,000 calories.  I will be actually weighing myself on Monday's from here on out.

Copycat Trader Joe’s Bananas

Copycat Trader Joe’s Bananas

Ingredients
  • 1 banana
  • 1 heaping cup dark chocolate chips
  • 2 Tbsp coconut oil
INSTRUCTIONS
  1. Slice the banana and place the slices on a tray. Put the tray in the freezer until the bananas are frozen solid. About an hour.
  2. Meanwhile place the chocolate chips and the coconut oil in a small microwave safe bowl or measuring cup. Microwave for 30 seconds and then stir. Microwave for another 15 seconds and stir again, until all the chocolate is melted and smooth. Put it back in the microwave for another few seconds if necessary. Don't over heat. Set the chocolate aside to cool.
  3. When the bananas are frozen, dip them into the cooled chocolate and coat on all sides. I like set the slices on a fork and then use a spoon to help drizzle the chocolate all over. Let any excess chocolate drip off before setting the slice down on parchment or waxed paper. Put the slices back in the freezer right away.
  4. You can store the slices in a zip lock freezer baggie once the chocolate has hardened.

Homemade ‘Jello’

Healthy Homemade ‘Jello’ Recipe


Ingredients
  • 2 cup – apple juice
  • 2 cup – Pomegranate juice
  • 4 envelope (1 tbsp) – Gelatins, dry powder, unsweetened
Directions
  1. Pour 2 cups of the juice into a bowl.  Sprinkle the gelatin over the entire surface of the juice and let sit for 5 minutes to soften.
  2. Heat the remaining 2 cups of juice until it comes to a boil.
  3. Pour the hot juice into the bowl and stir to combine and to dissolve the gelatin.
  4. Pour into a 9x 12 baking pan.  Refrigerate until firm, at least several hours.
  5. Slice into cubes and serve plain, or with whipped cream.

Day 6


Day 6 already.  I will admit I have not been as good at this as should have been but I will not give up.  As normal I was not hungry when I woke up.  Sometimes I have a hard time getting breakfast in first thing in the morning.  I usually have a big drink of water and that keeps the hunger pains down.  But I know that breakfast is the most important meal of the day.

Talked with my good friend and health coach Sheila Favero and she suggested the I might consider following the eating lifestyle of those that have bariatric surgery.  I am actually considering it.  Since at one point I was considering the surgery. We will see.

Today's calorie count was not good at all.  It is 3100.  I knew I should not have had the cake.  It was left over from my birthday and what was left hit the garbage can last night.  I will admit it was good, though.  I was sad to see it go in the can but I am glad it did.  I did get my 100 + ounces of water.  And my steps were over 8,000, so I did a couple of things right.

Day 5



Today is Day 5 on this journey.  As I stated before the day started out fine.  Actually most of days do.  My breakfast is usually not to bad and if I stay away from the sugar and eat a snack mid morning I am not usually hungry at lunch.  It drives Vickie crazy that I can not eat something if I so chose.  Meaning that I can bypass sweet treats when I chose.  I usually drink 100-150 ounces of water a day.
  I did stop by Jimmy Johns and picked up a sandwich tonight.  Vickie loves it when we split a dinner.  She has always admired my sister and her husband for doing that and commented that is why they are both so thin.  We would usually each eat our own meal and they would split one.  

As I said before this is going to be a long journey and there will be a lot of learning and changing of eating patterns.

Calorie count for the day is 1860.  Just over my goal of keeping to 1800 a day.  But yesterday was under so it all comes out in the wash.  Water consumption was 100+ ounces and steps were 8,995.  Didn't realize I was so close to breaking 9,000.  Should have checked and I would have walked around the house to get the last five steps or so.  Oh well.
