This recipe comes from Real Healthy Recipes I use chia seeds and quinoa. And love them. My wife will eat quinoa but is not a fan of chia seeds, especially as a thickener in puddings and things I make. She doesn't like the texture it gives those things. Even though I tell her it is a super food.
Popped Quinoa Trail Mix
Ingredients:
- 1 teaspoon Chia seeds plus 3 Tablespoons filtered water
- 2 Tablespoons raw honey, melted
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
- 2 Tablespoon coconut oil, melted
- ½ cup quinoa, popped
- 1 cup sliced almonds, raw and unsalted
- 1 cup macadamia nuts, raw and unsalted
- 1 cup pecans, raw and unsalted
- 1 cup pepitas, raw and unsalted
- 1 cup dried cranberries, unsweetened
- ½ cup sesame seeds
- 1 cup large, unsweetened coconut flakes
Instructions:
- Mix the chia seeds and water in a small cup and set aside for 15 minutes, until it becomes gel-like.
- Preheat oven to 375 degrees F. Generously grease a baking pan with coconut oil.
- In a small bowl combine the honey, extracts, coconut oil and chia seed mixture.
- In a large bowl combine the quinoa, nuts, berries, seeds and coconut flakes. Mix in the wet ingredients until well combined.
- Spread over the prepared baking sheet. Bake for 10 minutes, stir, and then bake for another 10 minutes until evenly golden
